Potato string bean subji

Ingredients

  • 1 tablespoon ghee
  • 1/4 tablespoon fresh ginger
  • 3 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne
  • 1 medium onion
  • 3 cloves garlic
  • 1 dash salt
  • 1 tablespoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cayenne
  • 4 medium diced potatoes
  • 1 cup chopped string beans

Instructions

Cut up vegetables into small cubes. Steam vegetables until done, about 7 minutes.
Drain the water and set the vegetables aside.
In large skillet heat up the ghee. Add the cumin seeds and mustards seeds. When they start popping add the onion, garlic and fresh ginger. Cook until they are golden brown. Add your spices and cook for one minute until you can smell the spices.
Add your vegetables and cook for around 3 minutes. Add salt to taste.
 

Comments

This is a dry subji instead of a wet one. I love the taste of the potatoes and string beans. This is a classic Indian recipe. I learned this while in India.
