Ingredients

• 1/2 medium onion diced fine
• 3 cloves diced garlic
• 1 tablespoon olive oil
• 2 cups string beans
• 1 medium tomato diced
• 6 tortilla corn tortillas cut up in triangles
• 4 oz goat cheese
• dash of salt
• 1/8 teaspoon paprika
 
 

Instructions

Cut off end of string beans. Rinse the string beans under cold water. Place in steamer and steam for around 7 minutes.
Sauté in olive oil the onions, garlic and onion until golden brown. Add the corn tortillas. Sprinkle with paprika. Add the string beans and stir. Place the cheese on top and take off heart. Cover pan and let the cheese melt.
 

Comments

This is a great way of cooking string beans. I used to make this dish at the observatory in Maui and everybody loved it. It ’s quick and easy to make.
