Ingredients

  • 5 medium diced potatoes
  • 2 cup leeks
  • 4 cups chicken broth
  • 1 cup cream
  • 1 dash salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chives for garnish
  • 3 tablespoons butter

Instructions

Melt butter in pot. Have heat on medium and cook the leeks until they become clear like and soft. You don’t want to sauté them.
Add the chicken broth and potatoes. Bring to boil and cook potatoes until tender. 15 to 20 minutes. Remove from heat and let soup cool for a few minutes.
Pour soup into food processor and blend well. You might have to do this in batches.
Pour soup back into the pot and add your cream, salt and pepper. Let soup cool and then place in refrigerator for at least 3 hours until it gets cold.
When soup is cool ladle it into bowl and garnish with fresh chives.

My Mom and Dad used to make this soup when I was young. It’s one of my favorite soups. I still have the same china they used to serve it in. It’s very easy to make. I never saw this soup in France. Years later I found out that a France chef invented this in New York City in 1917. He was from the town of Vichy where he was born.
