Ingredients
Filling
- 1 tablespoon ghee
- 1/4 tablespoon fresh ginger
- 3 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon cayenne
- 1 medium onion
- 3 cloves garlic
- 1 dash salt
- 1 tablespoon cumin seeds
- 1 teaspoon mustard seeds
1/2 teaspoon cayenne - 2 medium diced potatoes
- 1 cup green peas
- 1/4 cup fresh cilantro
Dough
- 4 cups flour
- 4 tablespoons ghee
- 1 teaspoon salt
- 8 tablespoons warm milk
Instructions
Preheat oven to 375
Filling
Filling
Cut up potatoes into small cubes. Steam potatoes until done, about 7 minutes.
Drain the water and set the potatoes aside.
In large skillet heat up the ghee. Add the cumin seeds and mustards seeds. When they start popping add the onion, garlic and fresh ginger. Cook until they are golden brown. Add your spices and cook for one minute until you can smell the spices.
Add your potatoes and cook for around 3 minutes. Add your green peas and take off fire. Add your fresh cilantro. Cover with a lid. Add salt to taste.
Dough
Put all dry ingredients with the ghee or butter in food processor. Pulse two times. Slowly add your milk and pulse. Dough should be not sticky nor too dry. Adjust accordingly.
With your hands form 6 or 7 round balls. On floured chopping board roll out the dough until it ’s thin and about the of a tea cup plate. Put the tea cut plate over the dough and with a knife cut a round circle using the plate as a template.
When you have all the dough cut up place dough on cookie sheet. Spread your potato mixture on one side of the circle dough. Fold the dough in half. With your finger press the dough together at the seams. Using a little milk to help you to close the seams.
Bake for 25 to 30 minutes or until Samosas are golden brown.

When I was in India I used to love to eat these at a Samosa Shack. For some odd reason they would serve this with tomato ketchup. To this day I still love Samosas. I no longer fry my Samosas but I bake them. They are like an Argentine empanada only spicier. By the way I still love to eat these with tomato ketchup.
