Ingredients

  • 12 spear diced asparagus
  • 1 tablespoon chana dal
  • 1 tablespoon toor dal
  • 1 teaspoon Asafotida(hing)
  • 1 teaspoon turmeric
  • 1/8 teaspoon cayenne
  • dash of salt
  • 1 tablespoon cumin seeds
  • 1 tablespoon coconut oil

Instructions

Soak both Dahl’s in water for at least an hour. Drain Dahl. Put Dahl in food processor. Add your spices. Add a few drops of water and pulse until you make a paste.
Heat up skillet. Add your coconut oil. When oil is hot add your cumin seeds. When cumin seeds start to pop add your dhal paste mixture and a little water. Cook for a few minutes and stir constantly. You don’t want to burn the Dahl mixture. Add your asparagus and cook until the asparagus is done. Don’t overcook your asparagus.
 
 

Comments

This is a Southern Indian style of cooking asparagus. The asparagus has a paste of two different kinds of Dahl and Indian spices. The Dahl has a lot of protein in it.
