Indian scrambled eggs

Ingredients
- 6 medium eggs
- 3 cloves garlic
- 1 medium diced onion
- 1/2 whole jalapeno Pepper
- 1 tablespoon coconut oil
- 1 medium diced tomato
- 1 teaspoon mustard seed
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- dash of salt
- 10 sprigs fresh Coriander diced fine
- 1 teaspoon fresh ginger
- 1/3 tablespoon sambal oelek(chili paste)
Instructions
Beat eggs Set aside bowl
Heat up skillet Add you coconut oil When coconut oil is hot add your mustard seeds When mustard seeds pop add you onion, garlic, tomatoes, ginger and jalapenos. Sauté until golden brown.
Add turmeric, coriander powder, salt, and chili paste to eggs mixture. Whisk. Add egg mixture to skillet and stir constantly until eggs are scrambled. Garnish with fresh cilantro.
