Ingredients

  • 8 spear Asparagus
  • dash of salt
  • 1/8 teaspoon olive oil

Cambodian mayonnaise

  • 1/8 tablespoon yellow curry paste
  • 3 tablespoon mayonnaise 
  • 2 whole Key Lime juice  

Instructions

Make Cambodian mayonnaise
 
 
Pre heat oven to 475
Place asparagus spears on cookie sheet. Sprinkle olive oil on top of asparagus. Cook until asparagus is done. 5 to 10 minutes. I like mine still on the crunchy side.
 
Dip asparagus into mayonnaise sauce.

This is a great dish to have. I love it when the weather turns hot. It’s a nice and refreshing dish. The mayonnaise contains Thai yellow curry but because of the small amount used it doesn’t over power the dish. You can taste a hint of the curry. The key limes or limes give it a slight sour taste.
