Ingredients

 
  • 16 tablespoons romesco sauce
  • 2 medium eggs
  • 2 muffin english muffins
  • 1/16 tablespoon red curry paste
  • 1 teaspoon olive oil
  • 1/2 cup red bell pepper

Heat up skillet. Add olive oil and Thai curry paste. Mix paste into oil. When oil is hot add 2 eggs to the pan. Fry them to the way you like them. While eggs are frying spoon the romesco sauce on the muffin and spread evenly. Put your eggs on top of the romesco sauce. Garnish with the roasted red bell pepper slices.

I love romesco sauce and eggs. The eggs are fried in olive oil and a touch of Thai curry paste. It’s a great way to wake up in the morning.
