Zucchini Quiche

Ingredients

  • 2 cups grated zucchini
  • 1/2 medium onion diced
  • 1 cup Cheese, Monterey, low fat
  • 3 medium eggs
  • 1 cup cream
  • 1 cup whole milk
  • dash of salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon 5 star anise
  • 2 crust Pie crust, standard-type, frozen, ready-to-bake, unenriched

Instructions

Preheat oven to bake 350
Grate zucchini until you have two cups.
Dice fine 1/2 onion.
Grate 1 cup Monterrey jack cheese.
Beat eggs. Add milk, cream, salt, pepper and 5 star spice.
Mix all ingredients together.
Put in 2 whole wheat pie crusts.
Bake at 350 for 45 minutes to 1 hour or until top is golden brown

I first made this when I lived in Miami Beach in the eighties. I still love this dish today.
