Ingredients

  •  1 cup brown Rice 
  • 3 cloves garlic
  •  3 stalk diced scallions
  •  1 tablespoon olive oil
  •  1 medium diced tomato
  •  1/2 medium diced onions
  •  1 cup spinach
  •  1 cup broccoli
  •  dash of salt
  •  1/8 teaspoon pepper
  •  1/8 teaspoon  tamari
  •  dash of marin(optional)
  •  1/8 teaspoon sesame oil
  •  1 tablespoon pickled ginger
  •  1 tablespoons sesame seeds  garnish
  • 1/4 cup water
  • 1 teaspoon curry powder
 

Instructions

Heat up skillet or wok with olive oil. When pan is hot add your garlic and onions. When they are golden brown add you tomatoes and sauté for a few minutes. Add your broccoli and sauté for a few minutes then add 1/4 cup water along with your salt, pepper, tamari, marin and curry powder. Cook until broccoli is done then add your spinach. Cook until spinach is wilted. Add your leftover rice to mixture and stir until rice and veggies are mixed together. Garnish with scallions and a drizzle of sesame oil.

This is a great recipe for leftover rice. You can use any vegetables you like. This dish is healthy and tastes great.
