Ingredients

  • 12 dried whole red chili pepper
  • 5 cups water
  • 1/4 cup flour
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1/4 cup half and half  milk (garnish)
  • 1 dash salt

Instructions

Take of stem and seeds from chili pods. In a mixing bowl soak Chile pods for 5 hours or more. Drain and place in blender. Add 5 cups of water. Blend for around 1 to 2 minutes until mixture is smooth.

Make a roux. In pot heat up olive oil and flour at low to medium heat. Stir constantly until you can smell the flour. Do not burn the roux. Add your red Chile mixture to pot. Cook at low to medium heat for around 20 minutes. Do not let the soup boil. Add your honey and salt to taste.

When serving in soup bowls add a splash of half and half.
 

Comments

When I lived in Santa Fe New Mexico many moons ago this was my favorite soup. A bowl of red Chile soup has about half a million units of vitamin C. Over the years I added honey and half and half. In Santa Fe we used to eat this with a sopapilla spread with honey. I don’t like to have my food fried in oil too much lately so I add honey to the soup.
