Shrimp with Spicy broad bean fish sauce

Ingredients

  • 12 large deveined cooked shrimp
  • 1 large diced red bell pepper
  • 3 teaspoons  spicy broad bean sauce     
  • 1 tablespoon peanut butter
  • 2 tablespoons diced  shallots
  • 2 cloves diced garlic
  • 1 teaspoon ginger or fresh Thai ginger, diced    
  • 3 leaves curry leaves
  • 1/4 cup water
  • 1 teaspoon coconut oil     
  • 1 oz coconut flakes(garnish)
  • 10 sprigs fresh cilantro diced fine (garnish)            

Instructions

Place coconut oil in skillet. Turn burner to medium high. When oil is hot add shallots, Thai ginger, garlic and curry leaves. Sauté for a few minutes and then add spicy broad bean fish sauce. Stir for around 1 minute. Add water and peanut butter. Stir and make into a sauce. You don’t want it to thick or to thin. Add more water if needed. Add diced red bell pepper. Cook until red bell peppers are done. Add shrimp and cook for around 2 minutes. Put in serving bowl and garnish with coconut flakes and fresh cilantro.

This is another easy Thai dish to make after a hard day’s work. I love shrimp and red bell peppers with a peanut butter spicy broad bean fish sauce.
