Ingredients

  • 1 tablespoon green curry paste
  • 1 teaspoon coconut oil
  • 1 cup coconut milk
  • 1 tablespoons shallots
  • 3 cloves diced garlic
  • 1 teaspoon fresh Thai ginger
  • 2 medium potatoes
  • 1 cube diced tofu
  • 5 sprigs cilantro(garnish)
  • 2 oz coconut flakes(garnish)
 

Instructions

Make green curry paste or use store bought.

Heat up skillet. When skillet is hot add the coconut oil. When oil is hot add the garlic and shallots. Sauté for a few minutes. Add the green curry paste and cook for another few minutes. Add the water and potatoes. Cook for 10 minutes or until potatoes are done. Add your coconut milk and tofu. Cook for 5 minutes.
Garnish with cilantro and coconut flakes.
