Indian mashed potatoes

Ingredients
- 2 medium potatoes
- 1 cup peas
- 1 teaspoon cumin seeds
- 2 cloves garlic
- 1teaspoon mustard seeds
- 2 tablespoons diced fine shallots
- 1 whole red chili pepper
- 5 sprigs fresh cilantro garnish
- 1/4 tablespoon ghee
- salt to taste
- 1/8 teaspoon pepper
Instructions
Peel potatoes. Dice and add to boiling water. Cook for 10 minutes.
While potatoes are cooking heat up skillet. Add your ghee. When ghee is hot add your mustard and cumin seeds. When the seeds begin to pop add your shallots, red chili pepper and garlic. Cook for a few minutes and then add your peas. Take skillet off burner and place lid on skillet. Add salt and pepper to taste
When potatoes are done drain and place them back into the pot. Mash potatoes with a potato masher. Pour in 1/4 cup milk, 2 teaspoons ghee and continue mashing until you have the consistency of mashed potatoes. Add salt and pepper to taste.
On serving dish place mash potatoes on plate. Arrange them to appear in a circle. Add your pea mixture on top and garnish with fresh cilantro.
