Ingredients

  • 1 tablespoon tamari
  • 1/4 cup water
  • 1 teaspoon coconut oil
  • 1 whole Thai chile pepper
  • 2 breast chicken breast
  • 1 teaspoon cumin seeds toasted
  • 1/4 teaspoon 5 star anise
  • 3 cloves garlic diced fine 
  • 2 tablespoons shallots diced fine
  • 1 teaspoon brown sugar or palm sugar
  • 1/4 tablespoon fish sauce
  • 1 teaspoon  5 star anise
  • 1 dash salt
  • 1/4 teaspoon  white pepper

Instructions

Preheat oven to 425
 
Heat up skillet. When skillet is hot add the coconut oil. Sauté the cumin seeds, garlic, Thai red chili pepper and the shallots. Add the palm sugar, tamari and fish sauce. Add 1/4 cup water.
 
Add the chicken breasts and sauté on both sides. Put in oven and cook for around 30 minutes or until chicken is done.
