Vietnamese chicken and tomato sauce

Ingredients
- 1/2 tablespoon sesame seeds
- 1 breast chicken breast
- 2 stalk scallions diced
- 1 cup mango diced
- 1 teaspoon coconut oil
- 1 teaspoon cumin seeds
- 1 tablespoon tomato paste
- 3 teaspoons spicy broad bean sauce
- 1 cup water
Instructions
Heat up skillet. Add coconut oil. When oil is hot add your cumin seeds and let them pop. Add the spicy broadbean sauce and tomato paste and stir. Add your water and stir until tomato paste is dissolved. Add your chicken, scallions and mango slices.
Simmer for 20 minutes or until chicken is done. I usually spoon the tomato sauce over the chicken every 5 minutes to baste the chicken.
When chicken is done sprinkle toasted sesame seeds on top of the chicken.
