Ingredients

Omelet
  • 3 medium eggs
  • dash of salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon 5 star anise
Spinach
  • 1/8 teaspoon star anise
  • 1 teaspoon coconut oil
  • 1/2 medium onion diced fine
  • 3 cloves garlic
  • 1/8 teaspoon fresh diced ginger
  • 2 cups fresh spinach
  • dash  of salt
  • 1/4 teaspoon white pepper
  • 2 teaspoons braggs liquid aminos
 

Instructions

Heat up skillet with coconut oil. Sauté onions, garlic and ginger. Sauté until the mixture is golden brown.  Add the spinach. Simmer for 5 minutes. Add star anise, white pepper, fish oil and salt.
 
Whisk your eggs. Add your spices.
 
Heat up omelet pan. Add your eggs. Cook on one side until the bottom is done. Flip over and cook for a few minutes until omelet is cooked.
 
Place on serving plate and spoon spinach mixture over the omelet.
 

Comments

This Vietnamese omelet  has spinach and a spice called star anise in it. The star anise taste like liquorice.
