Tofu with cabbage and carrots

Ingredients
- 1 block tofu cubed
- 1/2 head cabbage diced
- 2 large carrots cut diagonally
- 1 tablespoon coconut oil
- 1/4 teaspoon sesame oil
Peanut butter sauce
- 2 tablespoons peanut butter
- 1 cup coconut milk
- 1 teaspoon sugar or palm sugar(optional)
- 1 teaspoon soy sauce
- 1 tablespoon sambal oelek(chili paste)
Instructions
Heat up skillet. Add coconut oil. When oil is hot add the cabbage and carrots. Sauté for a few minutes. When cabbage is wilted take off burner.
In separate pot add all the ingredients for the peanut butter sauce. Mix until the mixture is smooth. Simmer mixture for 5 minutes.
Combine tofu mixture and peanut butter mixture. Serve.
Comments
This is a great Indonesian dish for lunch or dinner. It takes about 20 minutes to make.
