Ingredients

  • 4 cups chicken broth
  • 4 oz  rice noodles
  • 1 head cauliflower diced fine
  • 1 tablespoon coconut oil
  • 3 cloves diced garlic 
  • 2 tablespoons diced shallots
  • 1/8 teaspoon black pepper
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 tablespoon sambal oelek(chili paste)
  • 1 teaspoon palm sugar
  • salt to taste

garnish
  • 5 sprigs cilantro
  • 1 cup   spanish peanuts
 

Instructions

Heat up pot. Add coconut oil. Sauté the garlic, onion and cauliflower until golden brown. Add the black pepper, coriander powder and cumin powder. Sauté for a few minutes. Add broth and bring to boil. Add the rice noodles and simmer for 15 minutes. Add the palm sugar and chili paste.
Add the garnish to soup when serving.
