Bitter gourd and potatoes

Ingredients
- 1 cup bitter gourd sliced
- 3 medium potatoes diced
- 4 oz coconut flakes
- 1 medium onion diced fine
- 2 cloves garlic diced fine
- 1 teaspoon diced fine fresh ginger
- 1 teaspoon mustard seeds
- 1/8 tablespoon urad dahl
- 1 whole diced fine red chili pepper
- 5 leaves curry leaves
- 1 tablespoon coconut oil
- 1 teaspoon coriander powder
- 1 teaspoon cayenne
- 1 teaspoon turmeric
- 1/4 cup water
- dash of salt
Instructions
Heat up skillet. When skillet is hot add the coconut oil. When oil is hot add the mustard seeds, urad dahl and curry leaves. When mustards seeds begin to pop add the onions, garlic and fresh ginger. Sauté until golden brown. Add the coriander powder, cayenne and turmeric. Sauté for a few minutes and add the water, potatoes, and bitter gourd. Cook until tender. Add salt to taste. Add the coconut flakes.

This is a Southern Indian dish I got from one of my co-workers at work. It’s a really healthy dish.
