Ingredients
- 12 large shrimp
- 1 bunch fresh spinach
- 1 cup corn
- 1/4 cup tamarind
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- 7 leaves curry leaves
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seed
- dash of salt
- 1/4 tablespoon urad dahl
- 1 medium diced onion
- 1 whole diced jalapeno pepper
- 3 cloves garlic
- 1 teaspoon turmeric
- 1 teaspoon fresh ginger
- 1 diced medium tomato
- 1 cup coconut milk
- 1 cup water
Instructions
Heat up pan. When pan is hot add the coconut oil.
Add the cumin seeds, fenugreek seeds, fennel seeds, urad dahl and curry leaves.
When the seeds are toasted add the onion, jalapeno, tomatoes, fresh ginger and garlic. Sauté until mixture is golden brown. Add the turmeric, water, coconut milk and tamarind paste.
Cook for 5 minutes. Add the fresh spinach and corn. Cook for another 5 minutes. Add the shrimp and cook for 2 minutes. Add lime juice and salt to taste.
Add the cumin seeds, fenugreek seeds, fennel seeds, urad dahl and curry leaves.
When the seeds are toasted add the onion, jalapeno, tomatoes, fresh ginger and garlic. Sauté until mixture is golden brown. Add the turmeric, water, coconut milk and tamarind paste.
Cook for 5 minutes. Add the fresh spinach and corn. Cook for another 5 minutes. Add the shrimp and cook for 2 minutes. Add lime juice and salt to taste.
