Vegetable Korma

Ingredients
- 1 head dice fine cauliflower
- 1 cup string beans
- 1 cup fresh spinach
- 1 medium diced onions
- 2 cloves diced garlic
- 1 teaspoon cumin seeds
- 1 teaspoon black mustard seeds
- 4 leaves curry leaves
- 1 cup Korma store bought sauce
- 1/4 cup water
- 1 tablespoon ghee
Instructions
Cut up vegetables. Heat up pan. When pan is hot add the ghee. When the ghee is hot add the mustard, curry leaves and cumin seeds. When the seeds begin to pop add the garlic and onions. Sauté until they are golden brown. Add the vegetables and sauté for around 5 minute until the cauliflower is golden. Add the jar of Korma sauce. Add the water and simmer for 10 minutes. Garnish with fresh cilantro.

Korma as we know it today — a mild, creamy curry, richly flavored with coconut — goes back to the eighteenth century when Lucknavi chefs in Northeastern India first incorporated cream into the traditional Mughal dish then known as "quarama." In otherwards this is a great dish to make.
