Ingredients

  • 4 medium potatoes
  • 1/2 medium onion
  • 2 cloves garlic
  • 2 cups fresh spinach
  • 2 medium carrots diced
  • 1 teaspoon turmeric
  • 1 teaspoon coriander powder
  • 1/4 teaspoon cayenne
  • 1 cup coconut milk
  • 1 teaspoon coconut oil
  • 1 medium tomato
  • 1 whole jalapeno pepper
  • 1 dash salt

Instructions

Heat up pan. When pan is hot add the coconut oil. When oil is hot add the onions, garlic, tomato and jalapeno pepper. When onions are golden brown add the coconut milk, the spices, carrots and potatoes. Bring to a boil and simmer for 10 minutes. Add the fresh spinach and cook until spinach is down. About 2 minutes. Add salt to taste.
