Ingredients

Ingredients

  • 6 medium eggs
  • 1/2 medium onion diced
  • 1 teaspoon olive oil
  • 3 cloves garlic diced
  • 1 teaspoon black pepper
  • 1 dash salt
  • 1 /2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1 teaspoon turmeric
  • 1 medium potato diced 

Instructions

Heat up pan with water and potatoes. Bring to a boil and then simmer for around 10 minutes or until potatoes are cooked. Take off burner and strain. Set aside
Heat up skillet. When skillet is hot add the olive oil. Sauté the onions and garlic until they are golden brown. Add the fresh cilantro and fresh parsley. Sauté for a few minutes. Add the potatoes, salt, pepper and turmeric.  Sauté for a few minutes.
Whisk your eggs. 
 
Heat up omelet pan. Add half of your egg mixture. Cook on one side until the bottom is done. Flip over and cook for a few minutes until omelet is cooked.
 
Place on serving plate and spoon potato mixture over the omelet. Fold gently in half.
 
 
 
 

Comments

This is a great Persian egg dish. It has a lot of fresh parsley and cilantro in the dish. It’s very good for you.
