Ingredients

Ingredients

  • 12 large shrimp
  • 1 tablespoon olive oil
  • 2 breast chicken breast
  • 3 medium diced scallions
  • 1 teaspoon fresh ginger
  • 12 small asparagus diced
  • 1/4 cup macadamia nuts

Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon Mirin Rice Cooking Wine
  • 1/4 teaspoon rose water
  • 1/4 cup water
 

Instructions

Pre heat oven to 425.
 
Heat up large cast iron skillet. When skillet is hot add the olive oil. Sauté the scallions and ginger on medium heat for a few minutes. Turn on high heat. Add the chicken. Sauté for around 5 minutes until chicken is brown on the outside.
Add the sauce mixture to pan. Add the asparagus and shrimp. Sauté for a few minutes. When chicken is done add to skillet. Garnish with macadamia nuts.
Place chicken on cookie sheet and bake for around 20 minutes or until chicken is done.
Put back in skillet and add the asparagus

This dish is a fusion of Hawaiian, Indian and Asian cuisine. I love how simple it is and the unique flavors of the dish.
