Ingredients

Ingredients

  • 1 cup couscous
  • 1 cup garbanzo beans
  • 1 teaspoon olive oil
  • 1 3/4 cup water
  • 2 medium red bell pepper
  • 1/2 medium onion diced
  • 3 cloves garlic
  • 4 oz goat cheese
  • 1 teaspoon white pepper
  • 2 oz grated goat cheese

Instructions

Pre heat oven to broil
Place the red peppers on cookie sheet. Broil for around 15 minutes or until skin is almost black. Put red peppers in paper bag. Let it stand for around 10 minutes. Take out of bag and peel the skins. Dice the peppers.
 
Boil water. Add the couscous. Boil for 5 minutes and take off heat. Let it stand for around 5 minutes.
Heat up pan. Add the olive oil and sauté the onions and garlic until golden brown. Add the red peppers. Add the couscous and cooked garbanzo beans. Add black pepper. Sauté for a few minutes. Add the grated goat cheese.
