Ingredients
- 1 breast, bone removed chicken breasts
- 1 cup diced tomatoes
- 1 teaspoon coconut oil
- 1 bunch spinach
- 1 whole chipotle peppers in adobo sauce
- 3 sprouted corn tortilla
- 1/4 cup Mexican crema
- 1/2 cup Cheese, monterey, low fat
- salt to taste
Instructions
Heat up pan. Add coconut oil. When oil is hot sauté chicken breast until done. Heat up another pan. Add coconut oil. Add onions and saute until onions are golden brown. Add the diced chipotle peppers in adobo sauce and the spinach. Sauté until spinach is done. Add the sprouted corn tortilla and the Mexican crema. Add the diced chicken and the monterey cheese and let it melt into the dish. Add salt to taste.

I love how unique cream sauces are in Mexico. The tomatoes, Mexican crema and chipotle peppers in adobo sauce makes an incredible sauce.
