Ingredients

Ingredients

  • 3 medium eggs
  • 1/4 cup milk
  • dash of salt
  • 1 teaspoon paprika
  • 1 teaspoon ghee

guacamole

  • 1 whole avocado
  • dash of salt
  • 1/2 whole lemon
  • 6 sprigs fresh cilantro
  • 1 tablespoon diced onion
  • 1 medium ripe diced tomato
  •  2 cloves diced garlic
  • 1/2 whole jalapeno Pepper diced
 

Instructions

Place cilantro, onion, tomato, garlic and jalapeño in a mortar or a large bowl.
Using a spoon, scoop avocado cubes out of peel and place into mortar. Mash the avocado until it ’s still chunky. Do not over mash. You want the guacamole to be chunky. Add the lemon juice, Garnish with fresh cilantro and a sprinkle of salt.
 
 
Beat with fork your eggs until blended. Beat in the milk and spices.
Heat up omelet pan. When ghee is hot add the eggs mixture. Cook on low heat. When cooking stick the eggs mixture with a fork to allow the eggs to cook properly. When it is all the same consistency the omelet is done.
 
 
Place omelet on serving plate. Spread guacamole on top of omelet and fold omelet in half.
