  • 9 medium eggs
  • 1 teaspoon olive oil
  • 1/2 medium red onion 
  • 1 cup leeks
  • 1 tsp saffron
  • 3 cloves garlic
  • 1 teaspoon white pepper
  • 1 dash salt
 

Instructions

Pre heat oven to broil
Heat up skillet. Add olive oil. When oil is hot add the onions and garlic. Sauté on medium for a few minutes. Add the leeks. Sauté for a few minutes. Add the salt, saffron, and pepper.
Wisk the eggs. Add the eggs to the skillet. Cook on medium for a few minutes.
Put in oven for around 4 to 5 minutes. Eggs should be golden brown.
