Stuffed mushromms with Potato chipotle hash

Ingredients
Potato hash
- 1 whole chipotle peppers in adobo sauce
- 1/2 large potato
- 1 tbsp cumin seed
- 1 tablespoon olive oil
- pinch of salt
Mushroom
- 1 piece whole Mushrooms, portabella, raw
- 1/2 cup swiss cheese
- 1 cup, shredded Cheese, swiss, low sodium
Instructions
Preheat oven to 350
Dice the potatoes. Steam them for 10 minutes. Drain.
Heat up pan with olive oil. Roast the cumin seeds until they turn brown. Add the potatoes, chipotle peppers and a pinch of salt.
In glass baking dish place the mushrooms in dish. Spoon the mixture on top of the mushrooms. Place the cheese over the potato mixture.
Place in oven for 15 minutes.
Comments
I love these stuffed portabella mushroom. The chipotle peppers with potatoes gives this dish a great flavor.
