Italian potato salad

Ingredients

  • 3 large potatoes diced
  • 1 cup diced green beans
  • 1/4 cup diced onion
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 clove diced garlic
  • 4 tablespoons fresh basil
  • 1 dash salt

Instructions

 
Cut up potatoes and green beans into bite pieces.
Steam potatoes and green beans until done.
Dice onions.
In a jar combine olive oil, vinegar, garlic, and fresh basil. Mix well.
Combine all ingredients together. Add salt. Serve either hot or cold.
 
 
 

Comments

This is a great dish in the summer. I first learned how to make this dish while living in Miami Beach in the eighties. My friend John Baier made this for me.
