Ingredients

  •     1 cup watercress 
  •     1/4 cup butter
  •     1 medium onion
  •    10 sprigs parsley
  •     1 teaspoon fresh Thyme
  •     1 clove garlic
  •     1 tablespoon bay leaf
  •     2 cups chicken broth or veggie chicken broth
  •     3 medium russet potatoes
  •     1 cup half and half milk

Instructions

Simmer stock. Add potatoes and watercress. Turn heat to medium. Cook until potatoes are done.
Blend all ingredients until smooth. Add half and half, salt, pepper and butter.
When at room temperature put in fridge for 1 hour or more before serving.
 
 
 
 

Comments

I used to make this for dinner parties when I lived in Miami Beach. It’s great hot or cold. I prefer it when it’s cold.
