Ingredients

  • 1 tablespoon peanut oil
  • 1 cup mushrooms
  • 1 cup shredded cabbage
  • 6 cups chicken broth
  • 1 block fresh tofu(optional)
  • 2 tablespoons white rice vinegar
  • 1 teaspoon soy sauce
  • 1 tablespoon cornstarch dissolved in 1/4 cup water
  • 1 medium beaten egg
  • 1/8 teaspoon sesame oil
  • 1 stalk green onion sliced fine
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon sriracha hot chili sauce

Instructions

Sauté mushrooms in peanut oil. Add chicken or vegetables stock to pot.
Add tofu, cabbage, vinegar, and soy sauce. Cook for twenty minutes. 
Mix the cornstarch and water. Slowly pour the cornstarch mixture into the soup, stirring while it is being added. Let the broth come back to a boil. As soon as it is boiling, remove the broth from the stove.

Slowly drop in the beaten egg, stirring in one direction at the same time. Add the green onion and the white pepper to taste. Drizzle with chili oil or sesame oil if desired.
 
 
 
 
 

Comments

This is a very good Chinese soup. Very easy to make. I first made this in New York City in the seventies.
