Mole scrambled eggs

Ingredients
- 1/2 medium onion diced
- 3 cloves garlic diced
- 1 medium tomato diced
- 1/2 whole diced jalapeno pepper
- 3 tortilla corn tortillas cut in triangles
- 116 cup mole sauce
- 1/4 cup water
- 6 medium eggs beaten
- 1/2 whole avocado diced
- 10 sprigs fresh cilantro diced fine
Instructions
Sauté in frying pan the onion, garlic, tomato and jalapeno. When they turn golden brown add the tortillas. Sauté until the tortillas become soft. Add the water and mole and mix until mole becomes a light sauce.
Add the eggs. Stir continuously until eggs are scrambled. Garnish with avocado and fresh cilantro.

This is a great tasting scrambled eggs recipe. I ’ve been making this for years. I love the taste of mole, scrambled eggs, tortillas and avocados.
