Scrambles eggs with chives

Ingredients

  • 4 medium eggs
  • 1 tablespoon fresh chives
  • dash of salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon  pepper
  • 1 tablespoon butter
  • 8 spears asparagus
  • 1 teaspoon olive oil
  • 2 slice French bread or ciabatta bread
  • 2 tablespoon Mexican crema

 

Instructions

In mixing bowl stir with fork the eggs until they are mixed well. Dice the chives fine. Add to egg mixture. Heat up pan and add the butter. When butter is melted add the eggs and stir constantly until the eggs are scrambled. Add the salt, pepper and paprika to the eggs.
Heat up skillet. Add butter and olive oil. When butter is melted sauté the asparagus for 1 minute in the pan. Make sure the pan is nice and hot. Take off pan.
On serving plate place the eggs on plate. Next to the eggs place 4 asparagus spears. Add salt, pepper and paprika. In center of asparagus add the spoonful of fresh crema.
Add the toasted ciabatta bread to plate.

This is a great way to have scrambled eggs and asparagus for breakfast. I love the addition of Mexican crema. The olive oil and butter is one unique way to sauté vegetables. This technique is from Northern Italy. I love to combine different cultures in my recipes.
