Ingredients

  • 2 cups green leaf Lettuce
  • 1 medium celery diced
  • 1 medium carrot diced
  • 1/2 cup feta cheese
  • 1 cup diced mangos
  • 12 large olives
  • 1/4 cup diced cucumber
  • 1/4 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • 8  patty Falafel, home-prepared

Instructions

In salad bowl mix all ingredients together except for oil and vinegar. Add the olive oil and balsamic vinegar. Serve

Comments

This is a delicious salad. I first learned this recipe in New York City in the seventies.
