Ingredients

  • 2 cups cooked garbanzo beans
  • 2 cups spinach
  • 1 tablespoon ghee
  • 1 medium diced onion
  • 3 cloves diced garlic
  • 1 tablespoon yellow curry paste
  • 1/8 teaspoon rose water
  • 3 tortilla corn tortillas cut up in triangles 
       

Instructions

Sauté in ghee the onion and garlic until they turn golden brown. Add the garbanzo beans, yellow curry paste and 1/4 cup water. Cook for 5 minutes. Add the spinach and tortillas. Cook for another 5 minutes.
Before serving add a dash of rose water

 

Comments

This is a very unusual dish. I combine the flavor of Malaysian, Mexican and Indian cuisine. When I made this in Hawaii I worked at the observatory on Maui. My co-workers loved this dish.
