Ingredients
- 3 cups Rice, white, long-grain, parboiled, enriched, dry
- 1 cup urad dahl
- 3/4 teaspoon fenugreek seeds
- 1 dash salt
- 1 medium diced onion
- 1/2 cup fresh cilantro
- 1/2 whole diced jalapeno pepper
Instructions
Soak parboiled rice, fenugreek seeds and urad dahl in water overnight.
The following day put entire mixture including the water in blender and blend at high speed until it is nice and smooth.
Let the batter ferment for one day. I put mine in the oven overnight.

In a pancake pan - use ghee and put in pan. Ladle rice mixture in pan.
Garnish the surface with a little each of the onion, tomato, jalapeno, and chopped cilantro and spread evenly.
Cook until the bubbles form and become dry. Turnover. Be sure the batter is not too thick. It should be on the thin side. If you have the heat on medium when you ladle the pancake batter into the pan walk away from the pan and come back in 5 minutes. You want the pancake to be golden brown.

This is another basic recipe using the urad dahl and rice batter. My southern Indian friends at worked gave me this recipe. It tastes great. The Indians really know how to cook nutritious pancakes. This is high in protein.
