Ingredients

  • 8 corn tortillas
  • 1/16  cup mole sauce
  • 1 teaspoon olive oil
  • 1/16 cup cottage cheese
  • 5 sprigs fresh cilantro  garnish
  • 1 whole lime juice  garnish
  • 1 tablespoon hot sauce

Instructions

Heat up skillet with olive oil. When skillet is hot place one tortilla in skillet until its gets soft. 5-10 seconds. Repeat until all 8 are done.
 
 
Spoon cottage cheese and mole on the bottom of the tortilla and roll up tortilla as tight as possible. Do the same steps for the rest.
Cook in olive oil until tortilla is crispy.
 
Put on serving plate and serve. You can garnish with fresh cilantro, salsa and fresh lime.

I enjoy these taquitos. They are filled with cottage cheese and mole.
