Ingredients

Guacamole
  •     2 whole ripe avocados
  •     1/2 medium diced red onion
  •     1/2 whole jalapeno Pepper diced
  •     10 sprigs fresh cilantro diced fine
  •     1 whole fresh Lemon juice
  •     1/2 teaspoon salt
  •     1 medium ripe diced tomato
  •     2 cloves diced garlic

Instructions

Place cilantro, onion, tomato, garlic and jalapeño in a mortar or a large bowl.
Using a spoon, scoop avocado cubes out of peel and place into mortar. Mash the avocado until it’s still chunky. Do not over mash. You want the guacamole to be chunky. Add the lemon juice, Garnish with fresh cilantro and a sprinkle of salt.

When I can get some tasty avocados I love to make this dish. When I lived in Mexico I learned how to make great avocado with a mortar and pesto. I probably first had this dish when I was around five years old. It ’s still one of my favorites.
