Ingredients

  • 1 medium zucchini
  • 16 tablespoon romesco sauce
  • 1 medium onion
  • 1 cup feta cheese
  • 4 roll Rolls, french
  • dash of salt
  • 1/4 teaspoon paprika 

Instructions

Pre heat oven to broil
Slice zucchini into thin slices that are cut length wise. Spread olive oil on the zucchini. Add a dash of salt and paprika. Broil until the zucchini turns golden brown.
Cut French loaf in half. Cut the loaf length wise and spread the romesco sauce on one side of the bread. Add the zucchini over the sauce and then add a layer of onions and the feta cheese.
Broil until the crust is golden brown.
