Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 1/2 cup water
  • 1 teaspoon chili powder
  • 1 whole jalapeno pepper
  • dash of salt
  • 2 cups  hominy

Instructions

Sauté in olive oil onion, garlic and jalapeno pepper.
Add cooked hominy.  Add 1/2 cup water. Add chili powder and salt.
Cook on low for 20 minutes or so.

I made this one year for a Mexican Christmas dinner 25 years ago. It was a side dish. It ’s very easy to make. This dish is served around Christmas time in Mexico.
