Ingredients

  • 16 oz  Noodles, egg, spinach, dry, enriched
  • 2 cup fire roasted canned Tomatoes
  • 16 tablespoons pesto
  • 1 cup fresh parmesan cheese
  • dash of salt
  • 1/4 teaspoon pepper
  • 2 large diced zucchini
  • 1/4 cup pine nuts

Instructions

Make pesto or use store bought. http://www.whatscookingtreasures.com/Home/Update?row=243
Put tomatoes in blender. Blend. Add sprinkle of olive oil. Add pesto sauce. Blend.
Heat up sauce until it boils and then let it simmer for 15 minutes. Add pinch of salt.
Sauté zucchini in olive oil until its golden brown.
Cook pasta. Put pasta on serving plate. Add your zucchini and then put the sauce on top.
Grate fresh parmesan cheese over pasta. Add a dash of salt and pepper. Garnish with pine nuts.
Note I don’t drown my pasta with sauce. I’m like the Italians who don’t have tons of sauce on the pasta.

Comments

Yum !! Zucchini and pasta. The sauce is a combination of tomato sauce and fresh pesto. The garnish is pine nuts. Great dish and easy to make.
