Ingredients

  • 8 medium eggs
  • 1/4 cup milk
  • 2 cups leeks diced thin
  • 1/2 medium tomato diced fine
  • 3 cloves diced garlic
  • dash of salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1 cup Cheese, white, queso blanco
 

Instructions

Preheat oven to broil broil
Cut up leeks. Sauté in olive oil the leeks, tomato  and garlic  until leeks are soft. Add salt, pepper and dash of paprika.
Whisk Eggs. Add Salt, Pepper to Mixture. Add Milk Whisk.
Pour the eggs over leeks mixture. Put fresh queso blanco cheese on top of mixture. Cook for 5 minutes on medium heat.
 
Put pan in broiler until top turns golden brown.

This is a great dish to have for brunch. Very easy to make and good for you.
