Beets and peanuts

Ingredients
- 2 cups beets
- 1/2 medium onion diced
- 3 cloves garlic diced
- 1/8 teaspoon fresh ginger diced
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- salt to taste
- 1 teaspoon olive oil
- 1/4 cup water
- 1/2 cup spanish peanuts
Instructions
Wash the beets and dice them into bit pieces. Boil them in water for 20 minutes. Take them out and strain through a colander.
In frying pan add your olive oil. When oil is hot add your cumin and mustard seeds. When the seeds begin to pop add your onion, garlic cloves and fresh ginger. When this mixture is golden brown add your spices and stir for a few minutes. Be sure not to burn the spices. Add your water and stir. Add your cooked beets. Cook for a few minutes and then add your roasted peanuts.
