Ethiopian beet tops

Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion diced
- 3 cloves garlic diced
- 1 cup beet tops finely chopped
- 1 teaspoon berbere
- 1/2 cup water
- salt to taste
Instructions
Heat up skillet. Add olive oil. When oil is hot add your onion and garlic. Sauté for a few minutes. Add your berbere and stir into onion mixture. Add a little water and stir for 1 minute. Add your beet tops and the rest of your water. Cook until beet tops are done.

My wife loves beet tops. Most American never sees them when they buy them at the store. They throw them away. They are very healthy. This is the Ethiopian style of cooking them.
