Peanut chutney

Ingredients

  • 1 cup  spanish Peanuts
  • 1 whole Thai chile pepper
  • 1 small onion
  • 2 cloves garlic
  • 1/4 cup  tamarind
  • dash of salt
  • 1 teaspoon cumin seeds
  • 1 teaspoon  mustard seeds
  • 1/4 tablespoon urad dal
  • 5 leaves curry leaves
  • 1 teaspoon olive oil
  • 1 cup water

Instructions

In skillet roast peanuts until you can smell them. Take off skins and place the peanuts in blender.
Add olive to skillet. Turn on burner. When oil is hot add your Thai chili, cumin seeds, mustard seeds, urad dahl and curry leaves. When the seeds begin to pop take off burner and place in blender.
Add your onion, garlic, tamarind and water to blender. Blend until mixture is smooth. Add salt to taste.

My friend Mohan introduced me to this peanut chutney. It’s from Southern India. It’s great with Indian or Ethiopian food.
