Ingredients

  • 1 cup chicken breast
  • 1/2 medium onion diced
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 1 large diced red pepper
  • 1 cup water
  • 1/2 cup diced plum tomato
  • 1 dash Salt
  • 1 tablespoon red curry paste
  • 1/4 tablespoon fish sauce
  • 1 teaspoon coconut oil

Instructions

Cut up chicken breast into bite pieces. Heat up pot and add your coconut oil. Sauté your onion, garlic and fresh ginger until mixture is golden brown. Add your plum tomato. Add your water, dash of fish sauce, red pepper, and chicken and red curry paste. Stir. Simmer for 10 minutes.
 
Add salt and 1/2 of a juiced lime.
