Thai coconut soup

Ingredients
- 6 cups chicken stock
- 1 cup coconut milk
- salt to taste
- 3 leaves kaffir lime leaves
- 2 teaspoon galangal root
- 1 teaspoon sriracha hot chili sauce
- 1 teaspoon palm sugar or brown sugar
- 1/4 cup fresh lemon grass
- 3 tablespoons shallots
- 3 cloves garlic
- 10 sprigs fresh coriander
- 1 whole jalapeno pepper
- 1/8 cup fresh lime
- 4 sprigs fresh cilantro
- 1 tablespoon fish sauce
- 1 cup corn
- 1 cup string beans
- 1 cup mung bean sprouts (garnish)
- 5 sprigs fresh coriander(garnish)
- 10 large shrimp
Instructions
Heat up soup pot with 1 teaspoon coconut oil. Add diced garlic and sauté for a few minutes.
Put in pan chicken stock, coconut milk, kaffir leaves, galanga root, Thai Sriracha sauce, Thai chili peppers, fresh lime juice, fish sauce and salt to taste.
At this point you can put in your meat . This step is optional.
Bring to boil and then simmer for 20 minutes.
Strain broth and put back into soup pan. Add your vegetables. Cook for another 10 minutes. Garnish with mung beans and sprouts.
