Ingredients

  • 1 teaspoon coconut oil
  • 1 cup polenta
  • 1 tablespoon fresh green curry paste
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • 16 oz goat Cheese
  • 5 sprigs fresh cilantro

Instructions

Preheat oven to 425
Slice polenta so you have 12 round slice of polenta. Heat up skillet. Add the coconut oil. When oil is hot add the green curry paste and sauté for a few minutes. Add tomato sauce and water. Stir until everything is mixed well.
Place 1 polenta round on cookie sheet. Add a spoonful of sauce over the polenta. Add a layer of cheese. Repeat once more.
Follow this method for the next 3.
Bake for 10 minutes. Put on serving plate. Garnish with fresh cilantro.

I made this up walking around whole foods. I made fresh green curry paste and wanted something interesting. I think you will enjoy the flavors of Italy and Thailand.
